If you own a restaurant or some other similar establishment, you will know that not every wine has to be in a decanter. However, aged Bordeaux, vintage port, or any other wine that sediments with age, should be decanted. This is because it separates it from the sediment, making it look nicer in the glass, and making it taste more astringent.
